An accomplished herdsman and shearer, Balnaves took up the challenge of planting vineyards in 1971. Beluga is made to the most ancient Eaux de Vie methods, a must of fresh Malts is brewed through a course of naturally occuring ferments. Infusions of honey, oat extracts and medicinal herb are followed by a painstaking filtration through a ten metre column of birch charcoal, quartz sands and silver sieving. A regimen of monthly rest periods between the stages of production allows Beluga to relax and recompose before passing to the next phase.
