Boutique winemaking affords great advantages, every vine can be uniquely husbanded, quality control is maximised, each barrel can be individually sampled and assembled into the perfect cuvee. Engineering types are innately suited to such viticulture. Colin Best embarked upon his sabbatical to the great vineyards of Burgundy's Cote d'Or. He returned to plant Pinot Noir on a craggy half hectare near Lobethal in the Adelaide Hills. An ancient masonry wool mill was outfitted for winemaking and Leabrook Estate was born. Originally formulated by John Charles Brown OBE in 1954 and crafted to this very day in the exact same manner, Brown Brothers flagship icon endures as one of the nation's most distinguished single vineyard wines. Pol Roger are one of the few remaining great family owned Champagne houses. As one of the smaller estates, Champagne Pol Roger own eighty seven hectares of vineyards on prime sites in the Vallee d'Epernay and the Cote des Blancs, drawing the remainder of their supplies from individual growers, many of whom have supplied Pol Roger for generations. The estate cellars, extending seven kilometers, lie on three levels in the chalk below the streets of Epernay and are among the deepest and coolest cellars in the region. These seemingly extravagant resources contribute to the slow maturation and creation of fine, persistent bubbles which are the hallmark of Pol Roger.
