A delicious new world interpretation of Italy's most food friendly white wine grape, yet with more body than it's continental siblings, fully aromatic with heightened flavour profiles and pronounced varietal fruit. King Valley offers the ideal aspects and most conducive microclimes for growing Pinot Grigio, so very similar to the grape's original home in Veneto and Trentino. Generous in flavour and highly textural, in the tradition of the finest old world styles of Pinot Grigio, Windy Peak is just perfect for bringing out the best in all good food.
Windy Peak consistently over delivers on quality, specializing in exciting varietal wines such as Pinot Grigio. The philosophy is that great wine begins in the vineyard and should be treated to a minimal handling. De Bortoli retain the finest Pinot Grigio vineyards, having spent decades pioneering the varietal in Australia. Fully ripe fruit is harvested and pressed without crushing to retain vitality while avoiding any pink colour pickup. Batches are chilled to 5°C before vinification at elevated temperatures on natural solids, a component is sent to seasoned French oak casks. Windy Peak is given extended time on yeast lees, regularly stirred to give complexity to the natural fruit flavours. Alcohol 12.0%

A lively palate, textural and weighty, pleasant grassy and herbal fruit flavours, a softly acid, creamy finish.
