Sacred Hill are vinified at the De Bortoli Bilbul wineworks on the Riverina. The entire range continues to impress with its amazing quality and value. The marvelous efforts at Sacred Hill have won awards at major national and international wine shows, receiving rave reviews from the wine industry press. Parcels of Colombard grapes are squeezed to release the piquant flavours of skins, Chardonnay is gently pressed to retain varietal character and freshness. A timely repose on gross lees builds palate weight and adds textural creaminess.
At Sacred Hill the focus is on careful site selection, maturity of vines and high input viticulture with a move towards biological farming principles. There is also increasing awareness about the importance of stylish new blends and the consistency of multi regional wines. Minimal interference is the ultimate philosophy, allowing the wine to express it's natural self. Choice parcels of Chardonnay and Colombard are harvested in excellent condition, separately pressed to retain bright varietal fruit character. The juices are treated to a cool vinification in chilled fermenters, held for a term on sedimentery yeast lees to build creaminess and impart texture, clarified and bottled, completely unwooded and unoaked. Alcohol 11.5%
Pale straw hue. Fresh and ripe tropical fruit on the bouquet, passionfruits and lime. A vigorously fruit driven wine, full of tropical flavours around a defining green apple acid backbone, green melon, nectarines and grassy notes. Best enjoyed young and fresh with caesar salad or grilled fishes.
