Riverina New South Wales
De Bortoli know from Old Tawny Port and retain some of the oldest stocks of fortified wines in Australia. Some so ancient and precious, they can rightfully be called national treasures. From the sunny climes of their bountiful Riverina vineyards, De Bortoli have isolated parcels of fully ripened fruit to be vinified into an aged and mellow Fine Old Tawny Port. Luscious with generous caramel, chocolate and rancio characters, lightly framed by a judicious measure of refined oak.
The estate wineworks at Bilbul produces world class fortified wines. Great strides have been taken throughout the years to ensure the delivery of outstanding quality and value. Fruit can be sourced from over three hundred hectares of vineyard and from those of eminent local growers. Grapes are picked very ripe, the base wine is fermented to 10º Baume then fortified with a neutral spirit to halt fermentation, retaining the wine's natural sweetness. The desired flavour profile is achieved by identifying the most suitable batches throughout the course of fermentation and assembling these back with aged stocks of Tawny material which have been matured under a combination of French and American oak. Alcohol 17.5%
Sienna amber colour. Aromas of caramel and rancio, dried fruits and nut. A palate of candied fruit, chocolates and raisin flavours, developed characters from the time spent maturing contributes complexity and depth. Sacred Hill is already fully mature on release and fashioned for current consumption but will keep in the bottle for several years. Perfect after a meal with a platter of cheeses, your favourite dessert, coffee, dried fruit and nuts.
