The promise of long lived red wine inspired Purbrick to establish new plantings at Chateau Tahbilk in 1949, today they are some of Victoria's oldest productive Cabernet Sauvignon vines. Cockatoo Ridge Sparkling Burgundy CONFIRM VINTAGE

Cockatoo Ridge Sparkling Burgundy - Buy
South Australia
From their base at the old Hardy's Siegersdorf winery, deeply rooted in the heart of the Barossa, Cockatoo Ridge understands the philosophy of good fruit-driven sparkling burgundy. A decidedly juicy Cuvee, delivering complexity and heightened flavours of chocolate and berries, softened by soothing notes of creamy vanillan and a jujube-like chewyness, all brought together by a refreshing grapey acidity. Inspired by the intensity and colour of the Australian landscape, this uniquely Australian wine is highly akin to all good cuisine.
Cockatoo Ridge regularly identify sources of premium fruit, as part of their standard operating procedures, one of the key factors which makes most everything from this estate always so attractive. The Cuvee was crafted to specifications which required a sophisticted and rigorous collation of grapes, for the express purpose of fashioning a sparkling Burg, and no other wine. A vigorous testing and trialling regimen, to arrive at the the perfect pitch of fruit, tannin and varietal definition, was applied before determining the finished wine.
An amazingly resilient mousse, the effervescence of this handsome wine clings to the glass. Purpley and gamey, it exudes heady odours of chocolate and cassis, cherry and vanillan, swirls of creamy anise & strawberry parfaits, absolutely awash with big fruits and chocolateyness, it moves rapidly along the palate towards a violet and cherry-ripe richness. Bubbling burgundy that's a sensational all weather wine.

The brand's international popularity is growing rapidly, with sales to the United States alone expected to increase from the current 2,000 cases to more than 50,000 over the next 12 months. The strength of the brand lies in dedication to quality wine-making, product consistency, intensive marketing and careful cost control.

The fruit for Cockatoo Ridge's wines is sourced from their own carefully tended vineyards and from reputable contract growers throughout the Barossa Valley. The skilled winemakers often identify additional sources of premium fruit in areas outside the Barossa Valley, without compromising the house style.

Cockatoo Ridge Wines operates on a quality fruit philosophy. While the winery aims for self-sufficiency in fruit supplies, the production system is also geared to sourcing premium grapes from growers who are contracted to meet strict quality standards.
