There are four tiny patches of vine at Scotchman's Hill, which have been mollycoddled by Robin Brockett, since the start of his tenure as chief winemaker in the 1980s. Excruciatingly limited after a strict pruning and rigorous sorting of fruit, they each yield a mere hundred cases of wine. Templar Vineyard occupies two gently sloping terraces above Awatere River, each picked to optimal flavour ripeness and processed separately to provide a number of blending options. All parcels spend time on skin contact to enhance the intensity, followed by a gentle press, cold settling and racking. Cool fermentations are employed to retain purity of flavour and aromatics. Upon completion, batches remain on yeast lees for several months to build richness and mouthfeel. Components are racked and assembled, gently fined, filtered and immediately bottled, preserving the purity of flavour, freshness and superb palate richness.
