Johann Gottfried Scholz served in the Prussian army as a battlefield bonesetter, before joining the great emigration of Lutherans from Silesia to Barossa Valley. This low cropping site is managed with a focus on enhancing soil vitality to grow healthy and balanced vines, employing organic methods to work in complete harmony with nature. Templar Vineyard occupies two gently sloping terraces above Awatere River, each picked to optimal flavour ripeness and processed separately to provide a number of blending options. All parcels spend time on skin contact to enhance the intensity, followed by a gentle press, cold settling and racking. Cool fermentations are employed to retain purity of flavour and aromatics. Upon completion, batches remain on yeast lees for several months to build richness and mouthfeel. Components are racked and assembled, gently fined, filtered and immediately bottled, preserving the purity of flavour, freshness and superb palate richness.
