Airline pilots make surprisingly good wine. Their appreciation of the sciences, a respect for the weather and a bird's eye view of the land, all invaluable to the winemaker's art. John Ellis would take every opportune weekend away from his regular New York Paris route, to pursue a passion for viticulture. He planted the first commercial Cabernet Merlot vines in the Hamptons and found time between trans atlantic flights to work vintages amongst the Grand Cru vineyards of La Bourgogne. Beechworth attracts the most artisanal winemakers, the region's rich mineral soils and parched, undulating terrains, breed wines of vigorous flavour, crystalline textures and boney savoury tannins. The first parcel of Crown Land in the region was acquired by Isaac Phillips in 1857, he christened his estate Golden Ball and built a hotel named Honeymooners Inn, servicing miners on their way up the steep trails to the Beechworth goldfields. Lindsay McCall's enthusiasm for great wine began in the 1970s, he established his first Mornington plantings in 1985 on the site of a derelict orchard at Red Hill along Paringa Road. From day one, McCall focused on exactingly managing the soils and the vines, after completing his day job as local school teacher. His affinity for the land and astonishing feel for winemaking produced monumental vintages of Pinot Noir, which propelled the exquisite range of Paringa Estate wines to international renown. Grapes are predominantly sourced from good vineyards in the Yarra Valley. Yarra Ridge retains a large inventory of reliable growers, ensuring the highest quality of fruit. Many viticultural innovations have been introduced, among them are trellising systems such as the geneva double curtain, Scott Henry and Lyre. A combination of relatively low yields and limited rainfalls translate into smaller harvests of higher quality Sauvignon Blanc. A cool vinification takes place in refrigerated fermenters with choice yeasts. Juices are kept separate from skins to reduce phenolics and ensure clean varietal flavours are preserved. A prompt and early bottling retains all the fresh fruit characters.
Pale straw with green hues. The nose displays bright, fresh aromas of snow pea and green bean, fragrances of honey and spice, hints of nettle, lifted citrus and fresh cut grass, followed by rich tropical nuances. The exciting bouquet leads onto a refreshing palate, showing citrus and gooseberry, flavours of lychee combined with a zesty acidity to produce a refreshing and elegant wine. Yarra Ridge
Since its inception in 1988, Yarra Ridge has become one of the most successful vineyards in the Yarra Valley

Yarra Ridge was the brainchild of a lawyer, Louis Bialkower, who bought the land in 1982. The following year, Louis planted five hectares to Cabernet Sauvignon, Pinot Noir and Chardonnay. The reputation of Yarra Ridge grew, and from 1989 to 1995 every vintage of Yarra Ridge Chardonnay that was shown at wine competitions claimed a trophy.

The 1992 Chardonnay was judged Best Premium Chardonnay at Australia’s National Wine Show in Canberra. In the following year the 1993 Yarra Ridge Chardonnay won Best Current Vintage Dry White at the same show. Since Beringer Blass entered the scene, in 1993, the Yarra Ridge winery and vineyards have expanded and improved at a dynamic rate. The original five-hectare planting has become 60 hectares, but the philosophy has remained the same. At Yarra Ridge, the wine is made in the vineyard.

Many viticultural innovations have been introduced, among them are trellising systems such as the Geneva Double Curtain, Scott Henry and Lyre. The results of these viticultural innovations are extremely encouraging. Fruit ripeness has improved and the incidence of disease has been considerably reduced.
