Established just eleven years after the founding of South Australia, the ancient vines in the Hundred Of Moorooroo were planted circa 1836 by the Jacob brothers, after accompanying Colonel William Light on the Seven Special Surveys expedition to populate Adelaide's north. Established 1968 by Word War II flyer Egerton E.S Dennis, on ninety acres of McLaren Flat along the prestigious winegrowing terroirs at Kangarillla Road, the Dennis family pioneered the production of Mead alongside colleague and enthusiast John Maxwell. Dennis initially sold his harvests to some of Australia's most eminent brands before founding his own label in 1971,with the object of converting the high quality fruit into pure, estate made wines. The sparkling wines of Valley Loire are known for their vitality, freshness and affable drinkability. Within the picturesque and undulating, chateau lined terroirs of the greater Loire, lies the Appellation d'origine contrôlée of Vouvray, a region which yields a quality of sparkling that's rather unique, more generous and appealing, with an engaging complexity of flavour and delicate mousse. Marc Brédif was established 1893, one of the oldest maison in the commune, it remains the largest, a pioneer of the gently pétillant style of Vouvray sparkling.

Parcels of Chenin Blanc are normally harvested around October, off fully mature vines, twenty or more years of age, planted north to south on the clay limestone hillsides of Vouvray and Vernou sur Brenne. Bunches are selectively hand picked and sorted into crates, keeping only the healthiest grapes for vinification. Fruit is treated to a pneumatic press, the finest runs are retained and cold settled for a day or two. Juices are vinified for a month at a controlled 16C, to preserve fruit character while enhancing complexity. A component of reserve wines are included in the assemblage, bottled for two and a half years under cellar at 12C, followed by degorgement and liqueur dosage.
Straw gold hue, a supple effervesence. Stonefruits and honeyed citrus notes, light jasmine and apple notes. Creamy palate offering good weight of fruit, a clean, revitalizing sparkling showing developed fig characters behind fresh cut citrus, pear and apple flavours.
