Deen was a dynamic and energetic De Bortoli, who expanded the winemaking estate founded by his parents. Deen created the Vat Series to make available a range of delicious, full flavoured but approachable wines which drink brilliantly in their youth. Deen personally made the wines and chalked numbers on the vats to identify them. If you like your Cabernet Sauvignon to be easy drinking and highly compatible with good food, full of bright varietal charm and without any gritty tannins or overbearing oak character, then Deen Vat 9 is for you.
Great wine begins in the vineyard, De Bortoli use minimal handling and interference in the winery to preserve the important expressions of vineyard and fruit. They retain vineyards in diverse wine growing regions, each with its own regional style and affinity to certain grape varietals. Harvests of Cabernet Sauvignon are selected on the basis of ripeness, flavour profile and intensity. Components are crushed and cold soaked, inoculated and vinified at 22°C to 25°C for several days on skins for optimal extraction. Vat 9 completes full malolactic before being matured up to a year in a selection of finely coopered French and American oak barriques. Alcohol 14.5%
Deep purple colour with crimson hues. Fragrant cassis, ripe plum with hints of mint and subtle cedar oak aromas. This appealing wine displays cassis, ripe plum, red berry and capsicum characters, well balanced and completely integrated. Sweet plum to the palate, mint with fine grained tannins and supple oak finish to give a soft, well rounded wine. Enjoy with oven fired pizza, Sichuan duck.
