Taylor's are Clare Valley through and through, their red wines in particular are brimming with the adorable regional characaters of blueberry and mint. Harvests from viticultural precincts further afield are called upon to embellish and enhance. A celebration of regional synergies, the backbone of softer, aromatic Clare Valley Cabernet Sauvignon has been invigorated by the masculinity of Coonawarra fruit. A stylish Cabernet wine bearing ripe fruit characters within a basket of sweetly spiced oak supported by accomodating, judicious tannins.
Parcels of Clare Valley and Coonawarra fruit are selected to impart complexity and a level of diversity rarely found within a single wine region, while preserving the expression of individual regionality. Grapes are de-stemmed and crushed, juices are transferred to traditional potter fermenters. A component is soaked on skins for several days for optimal extraction. Juices are vinified through the action of Bordeaux yeast isolate, skins are pumped over the caps two to three times daily. Upon completion, batches are pressed to a selection of seasoned French oak hogshead barrels for malolactic. After a year in oak, Jaraman is fined and filtered before bottling. Alcohol 14.5%
Dark red centre with vibrant purple hues. Lifted aromas of blackcurrant, cassis and subtle herbal and mint characters along with complex spice and cigar box oak. A rich full bodied wine, well balanced across the palate with fine, elegant tannins, the hallmark of great Cabernet. Ripe flavours of blackcurrant and cassis delight with subtle savoury French oak characters of cedar and spice, followed by a long and persistent finish.
