The most splendid bunches of Pinot Noir grapes are hand selected off closely managed vines grown to highly specialized sites in the cooler aspects of Adelaide Hills and Victoria's Alpine Valley.
Parcels of Pinot Noir are selected on the basis of delicate flavours and a naturally high acidity that's requisite for the construction of a sparkling wine in the tradition of Champagne. Bunches are hand picked into 200 kilogram crates to minimise maceration of grapes during transport and placed in refrigerated rooms to chill the fruit down to 4C. These cold temperatures minimise oxidation and phenolic extraction. Whole bunches are then loaded directly into the bag press and gently squeezed to produce a clear, fine juice fraction. The juices are clarified and inoculated with native Champagne yeasts to ferment at cool temperatures. The assemblage spends twenty four months on tirage before disgorgement and liqueuring.
Pale gold with a tinge of copper, the attractive hue is enhanced by persistent, creamy textures. An elegant sparkling showing alluring aromas of cream biscuits, brioche and fresh strawberry fruit. Flavours of shortbread biscuit and subtle strawberry fruit following from the nose on to the generous, mouth filling palate. A delicate creamy mouthfeel, fine bead and perfect balance with a touch of natural acidity. Well suited as a wonderful aperitif, Blanc de Noirs also partners beautifully with fine foods. The style is one of grace and finesse, good balance and rich black fruit flavours, but above all drinkability.
