De Bortoli have made a priority of the sultry Syrah, training the most superb Yarra Valley sites to yield vintages of the new world's finest. A fine, ruby hued textural restorative, with gummy raspberry fruit aspects and light, gripping tannins, bring your Boheme to your choice of brasserie or bistrot.
De Bortoli treat Syrah as cause célèbre, an evocative style of Shiraz which conjures up visions of villagers treading grapes while feasting on local gastronomic fare. Gamay is the noble grape of Beaujolais, essential to the vibrant early drinking style, its thin skin and subdued tannin impart freshness and a measure of demure elegance to the finished wine. The recipe for Act 4 calls on a mixture of whole bunches and uncrushed berry inclusions, a course of early foot stomping to crush out some juices and initiate the ferments. Batches are treated to a regimen of pumpover and plunging, followed by transfer to a selection of 500 litre oak puncheons for a few months of lazy maturation. Alcohol 14.0%
