Lindsay McCall's enthusiasm for great wine began in the 1970s, he established his first Mornington plantings in 1985 on the site of a derelict orchard at Red Hill along Paringa Road. From day one, McCall focused on exactingly managing the soils and the vines, after completing his day job as local school teacher. The Yarra Ridge team have captured the distinct expression of Yarra Valley Pinot Noir. Upper Valley fruit, known for it's aromaticness and delicacy, has been combined with components of richer and riper grapes picked off vineyards lower down the valley floor at close proximities to the Yarra Ridge wineworks. The emphasis here is on ageing in seasoned French oak to enhance the fruit, showcasing the velvety nature and sublime cherry, barnyard and rhubarb characters of truly satisfying and memorable Yarra Valley Pinot Noir.

Standards for inclusion into Yarra Ridge Pinot Noir are set to the most exacting specifications. Fruit must express luscious berry characters and distinctive varietal flavours while displaying ripe tannins and favourable acid profiles. Grapes are cold soaked to extract the maximum colour and flavour. Inoculation and vinification is followed by small parcels completing their fermentations in French oak. All parcels underwent full malolactic which softened any harsh acids. Each vineyard parcel is kept separate throughout the winemaking process and reviewed prior to the final assemblage. Yarra Ridge was treated to an extended maturation in a combination of tight grained French oak barrels.
Dark cherry red in colour. Lifted aromas of strawberry and spice, a touch of cranberry, earthiness and hints of subtle oak, leafyness and whisps of cedar. Ripe plums and subtle five spice flavours on the tongue, the palate is soft and generous with doses of sweet and sour red and black cherries, the smoothest tannins are fully integrated with background oak.

Yarra Ridge
Since its inception in 1988, Yarra Ridge has become one of the most successful vineyards in the Yarra Valley

Yarra Ridge was the brainchild of a lawyer, Louis Bialkower, who bought the land in 1982. The following year, Louis planted five hectares to Cabernet Sauvignon, Pinot Noir and Chardonnay. The reputation of Yarra Ridge grew, and from 1989 to 1995 every vintage of Yarra Ridge Chardonnay that was shown at wine competitions claimed a trophy.

The 1992 Chardonnay was judged Best Premium Chardonnay at Australia’s National Wine Show in Canberra. In the following year the 1993 Yarra Ridge Chardonnay won Best Current Vintage Dry White at the same show. Since Beringer Blass entered the scene, in 1993, the Yarra Ridge winery and vineyards have expanded and improved at a dynamic rate. The original five-hectare planting has become 60 hectares, but the philosophy has remained the same. At Yarra Ridge, the wine is made in the vineyard.

Many viticultural innovations have been introduced, among them are trellising systems such as the Geneva Double Curtain, Scott Henry and Lyre. The results of these viticultural innovations are extremely encouraging. Fruit ripeness has improved and the incidence of disease has been considerably reduced.

The cellar door team at St Hubert’s are excited about the addition of the Yarra Ridge wines to their range. Yarra Ridge Sauvignon Blanc and the Shiraz have been particularly popular with their fruit driven, drink now style. These easy drinking table wines represent an excellent choice of for those who appreciate today's busy but relaxed pace of living.
