Ben's great grandfather was the first Langhorne Creek grower to supply grapes to Wolf Blass. The Glaetzer and Potts families have collaborated for decades to achieve many of the nation's most memorable vintages. Clairault implements a non interventional approach to winemaking, focusing on aromatics, picking on the basis of flavour rather than fruit sugar. Fruit picking occurs over several days as each block achieves optimal ripening, harvested throughout the cool of night and chilled. Parcels are cold pressed, settled and vinified to a variety of techniques, a fifth is fermented in French oak barriques for richness and texture. A unique strain of yeast is employed to enhance the passionfruit and gooseberry of Sauvignon Blanc. Upon completion, batches are held for a month on gross lees while gently treated to battonage before bottling in July.
Pale straw hues. Bright bouquet, newly cut grass characters, guava, grapefruit and orange blossom notes. Pleasingly dry, its vibrant acidity, driven by crushed lime, followed by white pear, lemongrass and dried apricot flavours. Time in French oak has infused a lingering, creamy finish accompanied by subtle minerality.
