Just a few kilometres north of Lowburn, near the windswept shores of frigid Lake Dunstan, atop the parched and laborious terroirs of Central Otago, a high country merino stud between the Amisfield and Parkburn streams was sown to vineyards two decades ago. A low yielding vineyard at Balhannah is at the heart of Shaw & Smith, yielding the most exceptional harvest, year in and year out. Inimitably Adelaide Hills, enhanced by the rich flavours and luxuriant tannins of pampered vines. An intensely currant flavoured rendition of Shiraz, supported by pliant, licorice tannins and seasoned by curls of fragrant tradewind spice.

Vines are cane pruned and use an arched cane pruning system. Canopy management plays an important role in controlling herbaceousness and achieving perfect flavour development. The soils at Balhannah Vineyard are free draining sandy loams over red clay with underlying quartzite and shale. The exclusively hand picked grapes are sorted and fermented, predominantly as whole bunches, the remainder whole berries in open fermenters, with gentle plunging and minimal working. Aged in 500L French oak puncheons over the course of fourteen months, followed by a further year of maturation in bottle under the estate cellars.
