Sherry wines possess a unique property, in that they impart the richness and take on the characteristics of older components after being blended with fresher stocks. The ageing wines are drawn from the bottom row of barrels and filled with wines from younger Criaderas or Sherry nurseries as they are known. At each stage, about a third of components are taken out and replaced with batches from the barrels above, until the following vintage when stocks from the new year are added. Alcohol 17.0%
Deep, dark brown, viscous, almost black in colour. Redolent of ripe fruit with the distinct varietal aroma of Pedro Ximenez, a pronounced and delicious bouquet, the essence of sweet raisins, sweet tobacco and cherry licorice richness. Generously complex, sweet, velvety and soft in the mouth, astonishingly well balanced, its long, memorable finish unravelling the story of the wine's great age.
