The success of Bin 707 Cabernet is largely based on a highly identifiable thumbprint. Penfolds orientation and culture, based on achieving consistency in quality and reliability, has remained intact throughout the vintages. The Bin 707 style shows intense varietal definition combined with new American oak to produce wines of great richness, power, harmony and concentration. Penfolds Bin 707 draws fruit mainly from Coonawarra, Padthaway, Barossa Valley and select parcels from Penfolds Bordertown Vineyard. Only ever released in years when the quality and character of the fruit passes the high hurdles of the wine's established style. Maturation in new American oak hogsheads for a lavish eighteen months.
Medium crimson in colour. This brooding giant releases compelling barrel-ferment richness, enveloped by vibrant cassis fruit. Once allowed to breathe, complex berry and cassis Cabernet aromas emanate with a background of cedary oak and violet nuances. Cassis and leafy aromas with some minty notes. The palate is solid and chewy with sweet cassis, minty flavours and leafy tannins. Bin 707 is an immensely concentrated style with dark berry and dark chocolate fruit balanced by well seasoned new oak, plenty of fruit sweetness, and powerful thogh not overwhelming tannins. A sensationally wooded Cabernet which offerss a backbone of firm, yet finely grained tannins, Bin 707 is a medium to long term cellar dweller.
