Promised Land is build around a backbone of estate grown fruit, vinified to a refreshing modern style with soild structure and excellent palate weight. The pure lifted Chardonnay chic, without the influence of oak, are perfect to enjoy alongside good food and cheery company.
Promised Land is a reference to ancient fossilised seahorses on the Taylor vineyards, indicating a bounty of the richest soils. Chardonnay is harvested at night from choice sites which can demonstrate the quality of fruit that's essential for Promised Land. Bunches are de-stemmed, chilled, gently pressed and cold settled. Vinification is carried out after inoculation to an aromatic strain of yeast, at moderate temperatures for up to a fortnight. Upon completion, batches are treated to a course of lees battonage stirring, increasing creaminess and palate texture. Assemblage into the finished wine, unwooded and unoaked, is followed by minimal fining and filtration to protect vital aromas and flavours. Alcohol 13.5%
Pale straw with a slight green hue. Fresh, lifted aromas of yellow peach along with subtle tropical fruit characters and a touch of lemony citrus. A medium weight palate with fleshy yellow peach, subtle pineapple and citrus flavours, refreshing, tight acidity and a lovely clean finish. A pure vibrant expression of Chardonnay without the influence of oak, for an easy drinking, any occasion wine which drinks cleanly and crisp alongside fine food.
