A serious contender for finest Cabernet Merlot in the land, having claimed awards at the highly prestigious London Wine Challenge and San Francisco International. Taylor's have set aside parcels of generously flavoured Merlot grapes, to be vinified alongside a backbone of their splendid Cabernet Sauvignon. Promised Land demonstrates great depth, complexity and generosity of flavour, the finish shows elegant tannins and lingering plum notes on a refined length of beautifully blueberried, Clare Cabernet persistence.
During excavation of the Taylor vineyard dam, the remains of three tiny seahorses were uncovered, fossilised in limestone bedrock. This was confirmation that the area was once the bed of an ancient inland sea and testimony that the rich, Terra rossa soils were indeed quite fertile. The Taylor family agreed that this was a truly promising omen and dubbed the new area Promised Land. Parcels of Merlot and Cabernet Sauvignon are selected on the basis of compatability, the fruit is crushed and fermented under steel tank at warmer temperatures. Following the completion of malolactic, Promised Land is treated to maturation in a combination of new and seasoned French oak barrels.
Crimson red with soft violet tinges. Lifted aromas of plum, red berries and liquorice along with a hint of spice, cedar and vanilla characters of French oak. A soft, round and gloriously fleshy palate delivering flavours of ripe blackberry and dark cassis along with subtle liquorice and chocolate. Merlot contributes softer, fleshy plum and black cherry flavours, filling out the middle palate. A satisfyingly focused and spicy finish, in a smooth and elegant styling.
