Coonawarra remains unassailable in it's production of Australia's most praiseworthy Cabernet Sauvignon. Stocks from choice vineyards across several vintages are assembled to form the ideal base for this luscious, creamy wine. A generous and mouth filling sparkler, exhibiting a palate of persistent red and black bramble flavours, cherry ripe and festive spice, garnished by notes of winegum, dark chocolate and cassis. Effusive and engagingly complex, it's well balanced and finely integrated palate is supported by liquorice tannins and supple seasoned oak.
From a dedicated winemaker operating in the heart of Coonawarra. His team have managed collation of fruit, vinification, bottling and maturation, to a combination of modern and traditional winemaking techniques. Cabernet Sauvignon is harvested, sorted and crushed. Following inoculation and a temperature controlled vinification, parcels are transferred to a large pressure tank where they are topped up by a dose of liqueur and treated to a secondary fermentation. Batches are then racked to oak for an extended maturation. Upon completion, barrels are all sampled and trialled, the final assemblage is determined and the finished wine is transferred under pressure into it's own bottle.
Deep red/ purple in colour with a fine bead and persistent mousse. Some plum, cherry and chocolate aromas along with regional leather and earth character. Aromatic oak is present in the background, a presence of florals, rose petal and violets are followed by the savouryness of oyster and soy. A rich, medium bodied wine with soft tannins and exquisite balance, the flavours of cherry and cassis, liqueured plums and chocolated fruits being dominant. An abundance of luscious complexity provides interest and persistence.
