After founding Mornington's eminent Moorooduc Estate and decades crafting the most memorable vintages for Mornington's leading brands, Richard McIntyre established a tiny, single hectare vineyard, on a prominent, high elevation site at Arthur's Seat, with a view to producing limited yields of the most exquisite small batch wines. The techniques of choice are wild yeast ferments, minimal intervention and good French oak, with a nod to traditional Burgundian practices, which allow the wines to speak of provenance, express their specificity of clone and articulate their sense of place. James Allardice established GlenDronach Distillery in 1826, it has since passed through the stewardship of Scotland's most eminent Whisky producers, Walter Scott, Charles Grant and William Teacher & Sons. Many of the original buildings are still functional, one is haunted by a Spanish woman who arrived in a Sherry cask. The very special Single Malt which bears the Allardice moniker is treated to eighteen years in a selection of seasoned Spanish Oloroso barrels, non chill filtered and bottled at a highly agreeable 46%, an exceptional experience in Speyside Whisky.
