Grown to the frigid climes of Central Otago, the vines at Prophet's Rock were established 1999 to the most auspicious sites in the nether regions around the ancient goldfields of Bendigo Creek. Palomino grapes are harvested off the illustrious Inocente vineyard at Pago Macharnudo, oak fermented and treated to a term of eight years under a cap of flor yeasts before transfer to the Tio Diego Solera for a further eight years and ritual top ups.
