Somewhere near the Seaview end of McLaren Vale's Chapel Hill Road, a perfunctory passerine perched her pincers astride a pair of power poles and saw herself alit. Down she went amongst the dry grown branches of an old Grenache vineyard, setting the valuable veterans ablaze. Constructed during early settlement by a supervisor of colonial convicts, at the very epicentre of the market gardens which serviced Hobart, Clarence House is a heritage listed manor which remains largely unaltered since the 1830s. Grapes are exclusively sourced from select vineyards in the Cote de Nuits, from plots of Domaine Chanson and from sites in the south of the Cote de Beaune. Soil types are mostly clay over limestone, which yield grapes exhibiting an immense concentration of flavours. All the grapes are hand picked at optimum maturity. A careful selection of Pinot Noir in the vineyard produce crunchy red wines with pure aromas. Grapes enter the fermentation vats in whole bunches for improved temperature control, gradual release of the sugars, and a more refined tannic structure. A cold maceration is followed by a long alcoholic fermentation for greater depth and expression of the wine's structural elements.
