Established 1976, Clairault are one of the pioneering estates on Margaret River. A tastefully limited range, from elite vineyards within the very dress circle of prestigious wineries at the heart of Margaret River's most illustrious precincts, Wilyabrup, Yallingup and Karridale. These are the dearest winegrowing terroirs in the Australian west, a place of auspicious soils and stimulating climes, the motherlode of environmentals which yield the most august vintages on the continent. The team at Clairault take a decidedly pastoral approach, biodynamically grown and environmentally sound, a sanctuary to native flora and fauna, their vineyards are managed to a completely natural agriculture. So exclusive are the wines of Clairault, that they can be hard to find, released in measured editions and allocated to long standing patrons, they represent an essential inclusion for every enthusiast of profoundly structured, statuesque yet sublime, wonderfully west coast.. William Fevre Fourchaume 1er Cru CONFIRM VINTAGE

Chardonnay Chablis France
The various négociant blocks of Fourchaume are fortuitously positioned along the sloping right banks of River Serein. Vines enjoy excellent exposure, planted southeast to southwest, encouraged by the richly mineralled and fossil shelled soils, to yield the most charming wines, characterized by the refined ebullience of Chablis. A highly aromatic bouquet, dominated by fruityness and floral, precedes an elegant palate of controlled power and racy fruit opulence.
Grapes are all hand picked into small thirteen kilograms cases and passed over the scrutiny of a sorting table. Parcels are treated to a brief two hours pneumatic press for gentle separation of juices and solid. A very light static settling is followed by gravity transfer of free runs and fine lees, into a mix of seasoned oak barrels and small static fermenters for vinification and a course of malolactic. Upon completion, batches are matured ten to fifteen months on partial lees before assemblage.

William Fevre
A family that has been in the Chablis region for more than 250 years, William Fevre's father was already a great winemaker

His son William founded the Domaine de la Maladiare and announced his first harvest in 1959. For many years, William Fevre (who to this day enjoys a very good reputation as a defender of historically renowned terroirs), has worked each plot keenly and skilfully so as to make wine whose personality reflects the authenticity of the soils from which they spring.

William Fevre

In 1998, the venerable Henriot family from Champagne succeeded him. To continue these focused efforts, the Domaine was taken up with the constant desire to make indisputably genuine and fine wines, and above all with bringing along a very personal expertise in Chardonnay. All the efforts have but one goal, to finely express the most subtle variations in the greatest Chablis crus.
