Major Sir Thomas Mitchell left more than just an invaluable bequeth of our nation's most detailed frontier maps. Mitchell distinguished himself in Wellington's army during the Napoleonic wars in the renowned 95th Baker Rifles. A gifted draftsman, he found his way to the nascent colonies of Australia, where his acumen at mapmaking won him the office of Surveyor General. During one of Mitchell's historical expeditions, he charted the fertile lands around Victoria's Goulburn Valley, establishing the colonial fruitgrowing township of Mitchell's Town. Grown to the frigid climes of Central Otago, the vines at Prophet's Rock were established 1999 to the most auspicious sites in the nether regions around the ancient goldfields of Bendigo Creek. Harvests of Sauvignon Blanc are collated from good vineyards throughout the finer winegrowing precincts of Marlborough. The fast draining, low fertility soils, warm days and chilly nights form a mesoclime that's unmatched anywhere else in the world for yielding lusciously fruit driven Sauvignon Blanc wines. Grapes are crushed and gently pressed before cold settling. The clear juices are racked off and inoculated to choice yeasts. A long cool vinification in controlled fermenters captures and retains the vibrancy of Marlborough fruit. Batches are treated to a term on lees before assembling into the finished wine, stabilised and filtered prior to bottling.
Light straw hue. Lifted nose of passionfruit and lychee flower, kiwis and kaffir lime. A lifted blackcurrant palate, complexed by notes of wet stone and thyme, elegant yet full with sufficient weight and texture to mate alongside white meat roasts, all balanced by flinty minerality.
