Kooyong Estate only make limited editions from tiny blocks of vine, a hectare or less, which yield deeply personal wines, highly eloquent of their terroir, aspect and clime. There are the pebbled ironstone soils of Farrago, which create an uncannily Burgundesque style of Chardonnay, redolent of grapefruits, mealy bran and wet flint. Established at Speyside 1893 and built on the site of a medieval chapel, Longmorn Distillery draw water from underground springs and mature their Malt in seasoned casks. Longmorn are one of the few distilleries which were founded during the Whisky boom of the late 19th century and have managed to survive until today. Malt and mash, vanilla tannins, nutmeg and sawdust floor, smokiness and roasted nuts, well oaked and fruity with liquorice and punchy spice, festive fruits and dried apple linger long on a finish, evocative of Bourbon cask, kernel oak.
